Mug cake recipes to satisfy those late-night cravings

Satisfy those late-night cravings as you curl up on the couch with a mug cake – for one.

The mug cake trend may have exploded with molten chocolatey goodness just as quickly as it slid into the background, but this simple dessert is the ultimate one-pot treat for those with a sweet tooth. Not only are mug cakes super easy to make but they can be whipped up and ready to enjoy in less than 5 minutes. 

 

CHOCOHOLIC

You can’t beat a good old chocolate pudding and this delicious self-saucing mug cake is just that. Apart from being a hit on its own, this recipe can also be effortlessly adapted by changing up just a few of the ingredients.

Mix 2 tbsp flour, 1 tbsp cocoa powder, 1 tbsp brown sugar, 1/2 tsp baking powder and a pinch of instant coffee together in a large microwave-safe mug. Pour in 2 tbsp milk, 1 tbsp oil and a splash of vanilla essence, and mix until combined. Sprinkle over 2 tsp brown sugar and ½ tsp cocoa powder. Then, carefully spoon 2 tbsp hot water over the top of the batter and microwave on high for 1 minute. For some added indulgence, top the mug cake with a spoonful of chocolate spread and a little caramel sauce.

 

BERRY BURST

Looking for something a little more fruity and a little less rich? Why not try this little taste of berry heaven.

Mix 3 tbsp flour, 1 tbsp white sugar and a 1/4 tsp baking powder together in a large microwave-safe mug. Pour in 1½ tbsp milk, 1 tbsp oil and a splash of vanilla essence and mix until fully combined. Stir in 1½ tbsp chopped frozen berries and sprinkle over 1 tsp extra sugar. Microwave the mixture on high for 1 minute 30 seconds. 

 

PEANUT CRUNCH

For the satisfaction of chocolate with the added crunch of peanuts, all you need to do is use the base of the chocoholic mug cake recipe. Then make the following tweaks: Add 2½ tbsp milk and substitute the 1 tbsp oil with 1 tbsp peanut butter and ½ tbsp oil. Mix in 2 tsp chopped peanuts before sprinkling over the sugar and cocoa and pouring over the water. Microwave for 1 minute.
