How it’s made: The ultimate frikkadel

THE FRIKKADELS

Ingredients
Vegetable oil, to fry
1 onion, peeled and finely chopped
2 cloves garlic, peeled and chopped
500g beef mince (or ½ beef, ½ pork)
125 ml fresh breadcrumbs
2 tsp chopped parsley
1 egg
½ tsp beef stock powder
Pinch of salt
½ tsp pepper

Method
1. Heat a little oil, and fry the onion and garlic until soft and translucent, about 5 minutes, then set aside to cool.
2. Combine with the rest of the ingredients. Form into about 12 balls. Try not to handle the meat too much while shaping.
3. Heat a little more oil and fry the frikkadels over medium heat until dark brown.

THE TOMATO SAUCE

Ingredients
60 ml olive oil
1 onion, peeled and chopped
2 cloves garlic, peeled and chopped
2 × 410g tin chopped tomatoes
Salt and pepper
½ tsp sugar, or to taste
2 tbsp chopped basil

Method
1. Heat oil in a pot over medium-low heat. Slowly cook the onion until soft and browned, about 10 minutes.
2. Add garlic and fry for 2 minutes.
3. Add tomatoes and bring sauce to a simmer. Cook for 30 minutes.
4. Season with salt, pepper and sugar. Add the basil.

THE ASSEMBLY

Pop the frikkadels into the pot of tomato sauce and simmer gently for 15–20 minutes, or until  cooked to your liking.

SERVING SUGGESTION: BALLS AND ALL

1. Sliders: Sandwich your frikkadels between mini buns, add toppings and chow down!
2. Beefy soup: Drop them into cooked soup and simmer for a few minutes.
3. Lettuce cups: Looking for healthy lunch ideas? Squash into a lettuce leaf and drizzle with yoghurt.
4. Frikkadel bake: Pop into a casserole dish, cover with cheese and bake. Yum!
