You can never go wrong with a boerie or a combination of basil, tomato and mozzarella. Put it all together and you have caprese boerewors rolls that will go down a treat.
SERVES 4 // COOKING TIME 30 min
200 g cherry tomatoes
2 tbsp olive oil
100 g mozzarella, sliced
4 pieces braaied boerewors
1. Preheat oven to 180°C.
2. Toss the tomatoes with the oil, salt and pepper. Roast for 15–20 minutes, until soft and bursting.
3. Fill each roll with boerewors, roast tomatoes, mozzarella and basil.
