There’s no better feeling than waking up in the morning knowing there’s leftover pizza waiting for you in the fridge. So why not whip it up, fresh? This breakfast pizza recipe is topped with everything you need for a scrumptious morning treat!
Vegetable oil, to grease
Bread dough (you can pick some up at the bakery section of your local grocery store) or 4 pizza bases
100 ml tomato purée
200g cheddar, grated
250g mushrooms, thinly sliced
200g bacon, chopped and fried
1 onion, peeled and thinly sliced
Salt and cracked black pepper
1. Preheat oven to 190°C and grease a baking tray with oil.
2. Divide the dough into 4 balls and roll out each one as thinly as possible (skip this part if you are using ready-made pizza bases). Place the pizza bases on the tray.
3. Spread tomato purée on each base and sprinkle with cheese. Arrange the mushrooms, bacon and onion on top. Season. Bake for 15 minutes.
4. Remove from the oven and crack an egg into the centre of each pizza. Bake for 10 minutes, until the eggs are cooked. Serve immediately.
