Boerie-potato hedgehogs

Our guide on how to make boerie-potato hedgehogs

SERVES 4

INGREDIENTS
4 potatoes
3 tbsp olive oil
1 onion, peeled and chopped
250g brown lentils, rinsed
200g boerewors
2 tsp melted butter
1 tbsp chopped parsley
Salt and pepper
Spring onion, sliced, to garnish

METHOD
1. Preheat oven to 180°C.
2. Horizontally slice the potatoes halfway through at four-centimetre intervals. Place them on a roasting tray, drizzle with one tablespoon of oil and bake for 45 minutes, until soft. Remove and set aside.
3. Heat one teaspoon of oil in a pot over medium heat and fry the onion until soft. Add the lentils and enough water to just cover them. Bring to the boil. Cook for 30 minutes, until the lentils are soft. Drain and set aside.
4. Cut the boerewors into 3–4 cm pieces and press into the slits cut into the potatoes. Drizzle with the rest of the oil, then bake for 15 minutes.
5. Stir the butter, parsley, salt and pepper into the lentils.
6. Divide the lentils between four plates and top each helping with a boerie hedgehog. Garnish with spring onion and serve.
