It’s breakfast time! How would you like a big batch of banana flapjacks topped with melting butter and a drizzling of honey?
MAKES 4–6 // COOKING TIME 30 min
1 ripe banana
1 cup oats
¼ cup milk
1 tbsp baking powder
1 tbsp apple cider vinegar
1 tbsp honey, plus extra to drizzle
1 tsp vanilla essence
½ tsp cinnamon
1. Place all ingredients in the blender and blitz until smooth. Allow the batter to rest for 15 minutes to thicken.
2. Preheat a pan over medium heat.
3. Pour ¼ cup batter into the pan for each flapjack. Cook for 1–2 minutes, or until the surface starts to bubble. Flip and cook for another 1–2 minutes. Repeat until all the batter is used up.
4. Drizzle with honey or sprinkle with toppings of your choice. Serve warm.
