Yoghurt French toast with honey and oranges

While it may be tempting to fill up on all your favourite comfort foods this winter, remember to keep your gut in check with healthy recipes like this yoghurt French toast with honey oranges.

SERVES 4 // COOKING TIME 30 min

INGREDIENTS
For the French toast
5 eggs
¼ cup plain low-fat yoghurt
½ tsp baking soda
1 tsp vanilla essence
Pinch salt
4 slices wholewheat bread
4 tsp butter
½ tsp olive oil
To serve
¼ cup plain low-fat yoghurt
1 tsp vanilla essence
4 tbsp almond butter
2 oranges, peeled and sliced
1 tbsp honey

METHOD
For the French toast
1. Whisk the eggs, yoghurt, baking soda, vanilla essence and a pinch of salt until smooth.
2. Place the bread in the egg mixture and let it soak it all up, about 3 minutes per side.
3. Heat the butter and olive oil in a pan and fry the soaked bread for 4 minutes per side.
To serve
1. Combine the yoghurt and vanilla essence together.
2. Spread almond butter on each piece of French toast. Dollop yoghurt, place a few slices of orange on top and then drizzle with honey.
