Healthy alternatives make all the difference when they look and taste this delicious! Whip up this sweet potato mash with tuna and broccoli-corn salsa for weeknight dinner you won’t forget.
SERVES 4 // COOKING TIME 25 min
500 g sweet potatoes, cooked and mashed
1 cup reserved grated broccoli from broccoli rice
Zest and juice of 1 lemon
1 cup reserved mielies from corn ketchup
2 spring onions, sliced
¼ cup olive oil
2 tins tuna, drained
1. Press the sweet potato mash through a sieve for the smoothest mash ever and season to taste. Set aside.
2. Mix together the broccoli, lemon zest and juice, mielies, spring onion and olive oil to make a salsa.
3. Serve the mash with the tuna and fresh salsa for a healthy, protein-packed dinner.
