This is a firm favourite with the MyKitchen team. And if like your sweet potato fries extra crispy, bake them, cool them and then fry them until they are hot.
SERVES 4 // COOKING TIME 45 min
4 sweet potatoes, cut into 1 cm slices
1¼ cup vegetable oil
Salt and black pepper
2 cloves garlic, peeled and crushed
1 tbsp Dijon mustard
1 tsp smoked paprika
Juice of 1 lemon
100 ml olive oil
1. Preheat oven to 180°C.
2. Toss the sweet potatoes with ¼ cup vegetable oil and 1 tsp salt. Place on a baking tray and cook for 30 45 minutes until crisp and golden.
3. Beat together the garlic, egg, mustard and paprika. Add the lemon juice.
4. Mix the olive oil and remaining vegetable oil in a jug. Slowly pour into the egg mixture, beating continuously. The mayo will thicken as you pour.
5. Season the mayonnaise and serve with the fries.
