These thirst-quenching strawberry margaritas are perfect for any time of the year and you can personalise them even further by making your own simple syrup. Remember that it consists of equal parts sugar and boiling water, so you can easily adapt this recipe for the amount you’d like to make, and from there you can infuse it with your favourite herbs and spices. Basil is particularly delicious with strawberries. You can even pop some in a jar and use it to sweeten iced tea, brush onto layer cakes to lock in moisture and drizzle over roasted carrots.

60 ml sugar
60 ml boiling water
250 ml tequila
250 ml triple sec
250 ml strawberry juice
125 ml fresh lemon juice
1L crushed ice
1. To make simple syrup, dissolve the sugar in the boiling water, then allow to cool.
2. Mix the tequila, triple sec, strawberry juice, lemon juice and simple syrup.
3. Decorate 8 glasses by dipping the rims in water and then in the sea salt.
4. Fill each glass with ice and top with the margarita mix.
