Ditch the seasoning packet of those 2-minute noodles and ramp up the flavours by making this simple spring onion & chilli-oil noodles recipe.
SERVES 4 / PREP TIME 10 min / COOK TIME 5 min
4 packets 2-minute noodles
3 spring onions, thinly sliced, plus extra to serve
3 garlic cloves, minced
1 ½ tbsp chilli flakes
1 tbsp sugar
¼ cup soy sauce
2 tbsp rice vinegar
¼ cup vegetable oil
Toasted sesame seeds, to finish
1. Cook the noodles according to package directions – don’t use the seasoning packet. Drain and set aside.
2. Place the remaining ingredients except for the vegetable oil and sesame seeds in a heatproof bowl.
3. Heat the oil until shimmering, then immediately pour over the bowl of ingredients – be careful as the mixture will sizzle and splutter. Add your noodles and toss well to completely coat in sauce.
4. Garnish with sesame seeds and extra spring onion to serve.
