Roasted cauliflower with lemon relish

You would be surprised at how perfectly the flavours come together in our roasted cauliflower with lemon relish. Whether it’s just for dinner with the fam or a fun food get-together, this side is a winner!

SERVES 4 // COOKING TIME 30 min

INGREDIENTS
1 cauliflower head, cut into small florets
2 lemons
2 tbsp olive oil, plus extra for drizzling
Salt and black pepper
1 small red onion, finely diced
2 tbsp parsley, finely chopped
1½ tsp red wine vinegar

METHOD
1. Preheat oven to 180°C.
2. Place the cauliflower in a large roasting tray. Finely slice 1 lemon and scatter among the cauliflower. Drizzle with olive oil and season.
3. Place in the oven and roast for 15–20 minutes or until the edges start to brown.
4. Zest and juice the remaining lemon and, in a mixing bowl, combine with the red onion, parsley, olive oil and red wine vinegar. Season to taste.
5. Remove the cauliflower from the oven and spoon the lemon relish over it while still warm, to soak in. Serve immediately.
