Roast vegetable galette

Looking for the perfect vegetarian treat to celebrate your special occasions? Make this roast vegetable galette the star of your main course!

SERVES 4 // COOKING TIME 2 hours 30 min

INGREDIENTS
For the crust
250 g flour
¼ tsp salt
115 g butter, diced
½ cup cold water
¼ cup cream
2 tsp lemon juice
1 sprig thyme, leaves only
1 egg, whisked
For the filling
5 carrots, diced
5 baby marrows, diced
1 butternut, peeled and diced
1 onion, peeled and quartered
1 sprig thyme
Olive oil
Salt and pepper
1 bulb garlic
1 amasi cheese ball, crumbled

METHOD
For the crust
1. Combine the flour and salt. Rub in the butter with your fingers until the mixture forms fine crumbs.
2. Whisk together the water, cream and lemon juice. Use a fork to mix it in until the crumbs form a dough.
3. Mix in the thyme. Add a little bit more water if the dough is too dry.
4. Tightly wrap the dough in cling film, flatten it slightly and chill in the fridge for 1 hour.
For the filling
1. Preheat oven to 180°C.
2. Place the vegetables on a baking tray, drizzle with oil, season with salt and pepper, and toss to coat.
3. Slice off the top of the garlic bulb, exposing the cloves. Drizzle it with oil, wrap in foil and place on the tray.
4. Roast for 20–30 minutes, stirring occasionally, until veggies are tender.
5. Squeeze the garlic from the skin and mash with a fork. Mix with the roast veggies and half the cheese. Toss gently.
6. Turn up the oven to 200°C.
7. Dust a piece of baking paper with flour. Place the dough on it and roll it out to a 30 cm circle ½ cm thick. Transfer the paper with the dough on it to a baking tray.
8. Arrange the vegetables on top of the dough, leaving a 5 cm border around the edges.
9. Roughly pleat the pastry, folding it in over the filling. Sprinkle with the remaining cheese. Brush with the egg.
10. Bake in the lower half of the oven for 35–40 minutes, until the crust is golden brown.
11. Allow the roast vegetable galette to cool for 10 minutes, then cut into wedges and serve.
