This potato crust pizza is an easy vegetarian meal that you can customise as you please to suit everyone’s taste buds.
SERVES 4 // COOKING TIME 1 hour 5 min
1 kg potatoes, peeled and grated
2 tbsp flour
1 cup Napoletana sauce
1 cup grated mozzarella
1. Preheat oven to 180°C and line a baking tray with foil.
2. Place the grated potatoes in a clean dish towel and squeeze out as much liquid as possible. Mix with the eggs and flour. Season.
3. Spread potato mixture out into a rectangle on the baking tray. Bake for 20–30 minutes, until crispy and golden brown.
4. Spread the sauce over the potato base and sprinkle with cheese. Bake 10–15 minutes, until the cheese is melted.
