Leek and strawberry quesadillas

We can’t get over how delicious and refreshing these strawberry quesadillas are. Perfect for summer weekends spent around the pool.

SERVES 4 // COOKING TIME 20 min

INGREDIENTS
Olive oil, to fry
2 leeks, thinly sliced
2 cloves garlic, peeled and crushed
4 wholewheat tortillas
1 cup grated mozzarella
½ cup crumbled goat’s cheese or feta
8 strawberries, thinly sliced
Handful fresh basil
2 tbsp balsamic reduction

METHOD
1. Heat a little oil in a pan and fry the leeks and garlic for 5 minutes, until just beginning to colour. Remove from the pan.
2. In a clean pan, heat enough oil to coat the base. Place 1 tortilla in the pan. Arrange ½ mozzarella, goat’s cheese/feta, strawberries, basil and leeks. Drizzle with the balsamic reduction and place another tortilla on top.
3. Once the bottom has turned golden and the cheese has begun to melt, flip the quesadilla over and lightly toast the other side. Remove from the pan, and cut into 6 wedges.
4. Repeat the process for the second quesadilla.
