Healthy trail mix

It’s snack time! Keep a container of our healthy trail mix, topped up and take a few handfuls to work every day to munch on. You can also add it to your breakfast or enjoy it with yoghurt.

MAKES 350 g // COOKING TIME 15 min

INGREDIENTS
100 g nuts of choice (we love walnuts)
100 g goji berries
100 g pumpkin seeds
50 g coconut flakes

METHOD
1. Preheat oven to 160°C.
2. Roast the walnuts on an oven tray for 10–12 minutes, or until lightly golden and beautifully toasted.
3. In a mixing bowl, combine the goji berries, pumpkin seeds, coconut flakes and toasted walnuts.
4. Store the trail mix in an airtight container and serve as is for an on-the-go snack, or sprinkle over some yoghurt for a healthy breakfast.
