Green vegetarian burgers with kimchi and eggs

There’s no meat here, only delicious green vegetarian burgers that are super quick to fire up on the braai for all your meat-free friends.

SERVES 4 // COOKING TIME 30 min

INGREDIENTS
For the veggie patties
1 tbsp vegetable oil
½ onion, finely chopped
250 g peas, cooked
½ cup sweet-potato purée
2 tbsp flour
2 tbsp breadcrumbs
1 tsp garlic powder
To assemble
4 eggs, fried
4 hamburger buns, sliced and toasted

Kimchi

METHOD
For the veggie patties
1. Heat the oil and fry the onion until golden.
2. Mix the onion, peas, sweet potato, flour, breadcrumbs, garlic, salt and pepper. Form four patties.
3. Using a fireproof pan to stop the patties falling apart, braai for 5 minutes per side.
To assemble
1. Place the rocket on the buns. Top with a veggie patty, kimchi and an egg.
