Curried fried eggs

Breakfast is served! If you’re someone who enjoys adding some spice to your meals, you’ll love these curried fried eggs.

SERVES 2 // COOKING TIME 25 min

INGREDIENTS
3 tbsp vegetable oil
1 tsp curry powder
Handful fresh curry leaves
4 eggs

METHOD
1. Combine oil and curry powder until smooth.
2. Pour into a pan, add the curry leaves and heat over medium heat.
3. Remove the curry leaves and crack the eggs into the pan. Fry until the edges of the eggs are crisp, bubbled and stained with curry.
