Creamy rice porridge with blackberries and coconut milk

It’s time to start looking for a delicious and hot winter breakfast that will keep you warm and healthy this season. Try this creamy rice porridge with blackberries and coconut milk for your fill!

SERVES 4 // COOKING TIME 30 min

INGREDIENTS
1 cup coconut milk
3 cups water
½ tsp salt
3 tbsp vanilla essence
2 cardamom pods
5 tbsp honey
1 cup rice flour
2 cups blackberries (extra for serving)
To serve
¼ cup coconut milk

METHOD
1. Bring the coconut milk, water, salt, vanilla, cardamom and honey to a low simmer.
2. Whisk in the rice flour and cook on a medium heat for 10 minutes.
3. Add the berries and mash with a fork.
4. Heat the coconut milk and pour over porridge. Garnish with fresh blackberries leftover.
