Chocolate waffle pops

These chocolate waffle pops are perfect treats for a kiddies birthday party. They’re also a quick and affordable option.

MAKES 10 // COOKING TIME 1 hour

INGREDIENTS
125 g butter, at room temperature
½ cup sugar
2 eggs
½ cup plain yoghurt
2 tsp lemon zest 
1 tsp vanilla essence
1 cup self-raising flour
250 g white chocolate, melted
¼ cup grated coconut

METHOD
1. Cream together butter and sugar until pale and fluffy.
2. Add eggs one at a time, beating well after each one.
3. Mix in the yoghurt and lemon zest.
4. Gently fold in the flour, in a figure-of-eight motion.
5. Pour 1 cup batter into your waffle iron. Place a stick at the base of each waffle. Cook until golden, carefully remove and cool on a wire rack.
2. Dip the top half of each waffle into the chocolate and sprinkle with coconut. Allow to set.
