Chicken with bulgar wheat and lemongrass ginger broth

A chicken dinner is always a winner! We think this chicken with bulgar wheat lemongrass grass ginger broth is a quick and healthy meal option you will love.

SERVES 4 // COOKING TIME 35 min

INGREDIENTS
For the broth
1 L chicken stock
5 cm piece ginger, cut into matchsticks
1 stalk lemon grass, bashed
For the chicken
2 chicken breasts
1 egg, whisked
1/4 cup sesame seeds
1 tbsp sesame oil
To serve
1 cup bulgar wheat, cooked
Handful baby pak choi
3 mini spring onions, sliced

METHOD
For the broth
1. Bring the chicken stock to a rapid boil, then add the ginger and lemon grass. Boil for 10 minutes.
For the chicken
1. Dip the chicken breasts in the egg and then in the sesame seeds.
2. Heat the sesame oil and fry the chicken for 5–7 minutes on each side, until golden and cooked through.
3. Slice and set aside.
To serve
1. Spoon the bulgar wheat into bowls and ladle in some of the broth.
2. Add chicken, baby pak choi and spring onions.
