Puffed rice is so much more than just a bowl of cereal. We used it to make these game-changing cardamom puffed rice fritters. Enjoy them with your morning coffee topped with melting butter.
SERVES 4 // COOKING TIME 10 min
2 cups puffed rice
2 potatoes, cooked and mashed
1 tbsp ground cardamom, toasted
Coriander, to serve
1. Mix the puffed rice, mashed potatoes, egg and cardamom. Form into about 12 fritters.
2. Shallow-fry the patties until golden and crispy.
3. Serve with coriander.
