Breakfast chia panna cotta

Cutting down on sugar doesn’t have to mean compromising on taste or flavour. Dish up our delicious breakfast chia panna cotta for a healthy start to your day.

SERVES 4 // COOKING TIME 30 min

INGREDIENTS
For the roasted plums
12 plums, halved
1 tsp vanilla essence
1 tbsp honey
For the panna cotta
3 gelatin leaves
2 cups cold water
½ cup plum syrup
1 cup milk
2 cups low-fat yoghurt
4 tbsp chia seeds

METHOD
For the roasted plums
1. Preheat oven to 180°C.
2. Place the plums in a roasting tray. Pour over 2 cups water, vanilla and honey, and bake for 15 minutes. Set plums aside and drain the syrup into a saucepan. Heat syrup for 10 minutes until reduced.
For the panna cotta
1. In a separate bowl, add the gelatin leaves to the cold water and leave to soften for 5 minutes, before squeezing out excess water with your hands. Add gelatin to the plum syrup and stir until fully dissolved.
2. Remove from the heat, and mix in the milk, yoghurt and chia. Stir well, then pour into serving dishes and allow to set in the fridge for six hours.
3. Serve the panna cotta with roasted plums and syrup.
