Banana bread waffles

There’s nothing like waking up to a delicious Sunday breakfast, so why not spoil your loved one with these sweet banana bread waffles?

SERVES 4 // COOKING TIME 50 min

INGREDIENTS
For the waffles
1 cup coconut flour
1 cup desiccated coconut
2 tbsp cinnamon
6 tbsp brown sugar
4 tbsp psyllium husk
1 tsp baking powder
1 tsp baking soda
3 bananas, mashed
1 cup milk
1 cup water
1 tsp vanilla essence
½ cup aquafaba
¼ tsp cream of tartar
For the fried banana
½ tsp coconut oil
2 bananas, cut in half lengthways
3 tbsp almond butter

METHOD
1. Preheat a waffle iron.
2. In a bowl, combine the coconut flour, coconut, cinnamon, sugar, psyllium husk, baking powder and baking soda.
3. Using a spatula, fold in the mashed banana, milk, water and vanilla until it’s smooth.
4. Whisk the aquafaba with cream of tartar for 6 minutes, until stiff peaks form. Fold into the batter.
5. Place one cup of batter on a waffle iron. Cook until golden, then carefully remove. Continue until batter is finished. Leave waffles to cool on a wire rack.
6. For the fried banana, brush a pan with coconut oil and fry bananas until caramelised, 3 minutes per side. To serve, spread a dollop of almond butter on a plate, place a waffle on top and finish with caramelised banana.
