These lovely baby marrow ribbons with creamy garlic sauce are perfect meat-free starters to serve to your guests at your next dinner party, and they make a delicious snack if you’re just looking for something light and flavourful.
SERVES 2 // COOKING TIME 30 min
2 cloves garlic
1 cup cream
3 thyme sprigs
1 lemon, zested
4 baby marrows, cut in ribbons
1. Fry garlic in a little olive oil until golden. Add cream, thyme and lemon zest. Season with salt and pepper. Cook for 10 minutes.
2. Toss baby marrow ribbons through the hot sauce. Cook for a few minutes to soften.
