Baby marrow is a super versatile veggies for any meal. This baby marrow, broccoli and halloumi with pesto rice dish is especially quick and easy for din-dins!
SERVES 2 // COOKING TIME 30 min
3 baby marrows, halved
30 g halloumi, thinly sliced
1 cup brown rice, cooked
1 tbsp pesto
100 g tenderstem broccoli, cooked
1. Fry the baby marrows in a little olive oil until charred. Fry the halloumi until crispy.
2. Mix rice and pesto. Top with charred baby marrow, broccoli and halloumi.
