2 large sweet potatoes
Beetroot hummus (puréed beetroot mixed with hummus)
Plain cream cheese or double-cream yoghurt
Toasted coconut flakes
Fig jam or honey
1. Cut sweet potatoes into ½ cm slices. Toast in an oven or toaster (set on high and toast repeatedly) until tender and crispy.
