1 cup grated mozzarella
1 cup grated cheddar
¼ cup grated Parmesan
8 chicken schnitzels
1½ cups Napoletana sauce
1. Preheat oven to 180°C.
2. Mix the 3 cheeses together. Place the chicken schnitzels on a baking tray. Spread Napoletana sauce over them and sprinkle with the cheese.
3. Bake for 30 minutes, or until the chicken is cooked through and the cheese is hot and bubbly. Serve over pasta, rice or quinoa, or with a fresh salad.
