4 sweet potatoes
170g tin tuna
¼ cup plain yoghurt
1 round feta, crumbled
1 tbsp dried mixed herbs
Salt and black pepper
1 red onion, peeled and sliced
Zest of 1 lemon
1 chilli, seeded, finely sliced
1. Preheat oven to 200°C.
2. Prick the sweet potatoes several times. Microwave on high for 12 minutes, until slightly soft. Place on a baking tray and roast in the oven for 20 minutes.
3. Mix tuna, yoghurt, feta and herbs. Season.
4. Halve each sweet potato and fill with the tuna. Top with basil, onion, lemon zest and chilli.
