Our guide on how to make apricot energy balls
MAKES 20 // HANDS-ON 20 min // HANDS-OFF 60 mins
150g fresh dates, pitted
135g dried apricots
45g desiccated coconut
1 tbsp coconut oil
1 tbsp cocoa
1. Place everything, plus 2 tbsp boiling water, in a food processor and blitz to form a paste.
2. Wet your hands to stop the mixture from sticking to them. Roll into balls.
3. Roll the balls in a little extra desiccated coconut.
4. Refrigerate the balls for 1 hour to firm up a little.
